Vegetable Lentil Stew
Slowcooker recipe
Serves:4
Ingredients:
200 g dried green lentils.
1 onion, chopped.
3 cloves of garlic finely chopped.
2 stalks of celery, sliced.
400 g leeks, sliced into rings.
300 g waxy potatoes, diced.
1 carrot, diced.
1 courgette, diced.
400 g diced tomatoes.
750 ml vegetable stock.
2 bay leaves.
1 tablespoon paprika powder.
1 teaspoon ground coriander.
1 teaspoon cinnamon.
1 teaspoon sambal oelek
Preparation:
Soak the dried lentils in a bowl of water for 10 minutes, then rinse thoroughly.
Place the lentils in the slow cooker pot with all the other ingredients.
Stir well and cook the lentil stew for 5.5 hours on low or 3.5 hours on high.
Season to taste with fresh parsley, salt and pepper.
